200g (7 oz) feta cheese

300g (10.5 oz) pasta of choice (penne or fusilli recommended)

2 cups cherry tomatoes, halved

1 medium red onion, sliced

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

1/4 teaspoon red pepper flakes (optional for heat)

Salt and pepper, to taste

1/2 cup fresh spinach

1/4 cup kalamata olives, pitted and sliced

Zest and juice of 1 lemon

Fresh basil for garnish

Grated Parmesan cheese (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Dish: In a large baking dish, combine the cherry tomatoes, sliced red onion, and minced garlic. Drizzle with olive oil and sprinkle with oregano, basil, red pepper flakes, salt, and pepper. Mix well to evenly coat the veggies.

      Add the Feta: Create a well in the center of the vegetable mixture, then place the feta cheese block there. Drizzle a little extra olive oil on top of the feta and season with a pinch of salt and pepper.

        Bake: Bake in the preheated oven for 25-30 minutes, or until the tomatoes are blistered, and the feta is soft and golden at the edges.

          Cook the Pasta: While the feta and vegetables are baking, cook the pasta according to package directions until al dente. Drain and set aside.
