Baked Egg and Chili Breakfast Muffins

1 cup milk (or plant-based milk)

1 cup all-purpose flour (or whole wheat flour for a healthier option)

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup bell peppers (diced, mixed colors for vibrance)

½ cup red onion (diced)

1 cup cooked and crumbled breakfast sausage or plant-based sausage (optional)

½ cup shredded cheddar cheese (or vegan cheese)

¼ cup fresh cilantro (chopped, for garnish)

1-2 fresh chili peppers (finely chopped, adjust based on heat preference)

Olive oil or cooking spray for greasing

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Grease a muffin tin with olive oil or cooking spray to prevent sticking.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk until well combined. Add the baking powder, garlic powder, onion powder, smoked paprika, salt, and pepper, and mix until uniform.

      Incorporate Veggies and Sausage: Stir in the diced bell peppers, red onion, cooked sausage (if using), and finely chopped chili peppers into the egg mixture. Make sure everything is evenly distributed.

        Add Flour and Cheese: Gradually fold in the flour until just combined. Be careful not to overmix. Gently stir in the shredded cheddar cheese, reserving a small amount to sprinkle on top before baking.

          Fill Muffin Tins: Pour the mixture evenly into the prepared muffin tin, filling each cup about ¾ full. Sprinkle the reserved cheese on top of each muffin for an extra cheesy finish.
