2 cups cooked shredded chicken (rotisserie chicken works great)

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon cumin powder

1/2 teaspoon salt

1/4 teaspoon black pepper

10-12 small corn tortillas

Cooking spray or olive oil (for brushing)

For the Avocado Cream:

2 ripe avocados, pitted and peeled

1/2 cup sour cream or Greek yogurt

1 tablespoon lime juice

1 clove garlic, minced

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a mixing bowl, combine the shredded chicken, cheddar cheese, cream cheese, garlic powder, onion powder, cumin, salt, and black pepper. Mix until all ingredients are well combined.

      Warm the Tortillas: To make them pliable, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in a damp paper towel and microwave for 20-30 seconds.

        Assemble the Taquitos: Take one tortilla and add about 2-3 tablespoons of the chicken mixture at the edge closest to you. Roll it up tightly, tucking in the sides as you go. Place seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.

          Bake the Taquitos: Lightly spray the taquitos with cooking spray or brush with olive oil for a crispy texture. Bake in the preheated oven for 15-20 minutes, or until they are golden and crispy.

            Make the Avocado Cream: While the taquitos are baking, prepare the avocado cream by blending the avocados, sour cream or Greek yogurt, lime juice, minced garlic, salt, and pepper in a food processor until smooth. Taste and adjust seasoning if necessary.
