Baked Chicken Fajita Foil Packs

1 pound boneless, skinless chicken breasts, sliced into thin strips

2 bell peppers (any color), sliced into thin strips

1 medium red onion, sliced into thin strips

3 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

8 small flour tortillas

1 cup shredded cheese (cheddar or Monterey Jack)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a large bowl, combine the sliced chicken, bell peppers, onion, olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Toss until everything is evenly coated.

      Create the Foil Packs: Cut large squares of aluminum foil (about 12 inches long). Place a handful of the chicken and veggie mixture in the center of each square.

        Seal the Packs: Fold the sides of the foil over the filling, then roll up the ends to create a sealed packet. Ensure no gaps exist for the steam to escape.

          Bake: Place the foil packs on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

            Add the Cheese: Carefully open each foil pack and sprinkle shredded cheese on top. Return the packs to the oven for an additional 5 minutes or until the cheese is melted.

              Serve: Carefully unwrap the packs (watch out for steam!), and serve with tortillas, garnished with fresh cilantro and lime wedges. Enjoy!
