2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground allspice

½ teaspoon ground nutmeg

½ teaspoon salt

½ cup granulated sugar

¼ cup light brown sugar, packed

2 large eggs

½ cup unsweetened applesauce

¼ cup vegetable oil

1 teaspoon vanilla extract

½ cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick spray or lightly coat it with oil.

    Reduce Apple Cider: In a small saucepan, bring the apple cider to a boil over medium heat. Reduce heat and let it simmer until it reduces to about ½ cup, which should take 10-15 minutes. Remove from heat and let it cool slightly.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground allspice, ground nutmeg, and salt. Set aside.

        Mix Wet Ingredients: In another bowl, beat together the granulated sugar, brown sugar, and eggs until well combined. Stir in the unsweetened applesauce, vegetable oil, vanilla extract, and the reduced apple cider. Mix until smooth.

          Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

            Fill the Pan: Using a piping bag or a spoon, fill each donut cavity in the pan about ¾ full with batter.
