1 lb boneless, skinless chicken thighs

1 tbsp olive oil

2 cloves garlic, minced

Juice of 2 limes

1 tsp cumin

1 tsp smoked paprika

1 tsp chili powder

½ tsp salt

¼ tsp black pepper

1 cup jasmine or basmati rice

2 cups chicken broth (or water)

Zest of 1 lime

½ cup fresh cilantro, chopped

Salt to taste

For the Toppings:

1 cup black beans, rinsed and drained

1 cup corn (canned or frozen)

1 ripe avocado, diced

1 cup cherry tomatoes, halved

¼ cup red onion, finely chopped

½ cup shredded cheese (cheddar or cotija)

Lime wedges, for serving

Fresh cilantro, for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine olive oil, minced garlic, lime juice, cumin, smoked paprika, chili powder, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Cover and marinate for at least 30 minutes in the refrigerator.

    Cook the Rice: Rinse the rice under cold water until the water runs clear. In a medium saucepan, bring the chicken broth (or water) to a boil. Stir in the rice, add a pinch of salt, and reduce the heat to low. Cover and simmer for about 15 minutes or until the liquid is absorbed.

      Finish the Rice: Once cooked, remove the rice from heat and fluff it with a fork. Stir in lime zest and chopped cilantro. Set aside.
