6 slices of thick-cut bacon, chopped

1 medium onion, finely diced

2 cloves of garlic, minced

4 medium russet potatoes, peeled and diced into small cubes

1 cup shredded sharp cheddar cheese

6 large eggs

1 cup whole milk

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/4 teaspoon red pepper flakes (optional)

Fresh chives, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and drain on paper towels, reserving about 1 tablespoon of bacon grease in the skillet.

      Sauté the Vegetables: In the same skillet with the reserved grease, add the diced onion and garlic. Sauté for about 3-4 minutes until the onion is translucent.

        Cook the Potatoes: Add the diced potatoes to the skillet and stir well to coat in the bacon grease. Season with salt, pepper, smoked paprika, and red pepper flakes (if using). Cook for about 10-12 minutes, stirring occasionally, until the potatoes are fork-tender.

          Combine Ingredients: In a large mixing bowl, whisk together the eggs and milk until well combined. Stir in the cooked bacon, sautéed onion, garlic, and potatoes.

            Add Cheese: Gently fold in the shredded cheddar cheese, reserving a small amount to sprinkle on top later.

              Assemble Casserole: Pour the mixture into a greased 9x13-inch baking dish. Spread it evenly and then sprinkle the reserved cheese on top.

                Bake: Bake in the preheated oven for 30-35 minutes, or until the casserole is set in the middle and the top is golden brown.

                  Garnish and Serve: Once out of the oven, let the casserole cool for 5-10 minutes. Garnish with freshly chopped chives before slicing into squares and serving.
