2 large eggs, lightly beaten

3 tablespoons soy sauce (adjust to taste)

1 tablespoon oyster sauce (or a vegetarian alternative)

1 teaspoon sesame oil (optional)

3 green onions, chopped (for garnish)

Salt and pepper to taste

Prep the Rice: If you're using freshly cooked rice, spread it out on a baking sheet to cool and dry out a little. Day-old rice is ideal as it prevents clumping.
