Avocado Tuna Salad Wraps

1 (5 oz) can of tuna, drained

1 ripe avocado, peeled and pitted

1/4 cup Greek yogurt (or mayonnaise for a creamier texture)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1/4 cup red onion, finely diced

1/4 cup celery, finely diced

1/4 cup cucumber, finely diced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper, to taste

4 large lettuce leaves (such as romaine or butter lettuce) for wraps

Optional toppings: sliced tomatoes, sprouts, or pickles

Instructions
 

In a mixing bowl, combine the drained tuna, avocado, Greek yogurt, Dijon mustard, and lemon juice. Use a fork to mash the avocado and mix the ingredients until they are well combined but still slightly chunky.

    Add the finely diced red onion, celery, cucumber, and dill into the tuna mixture. Stir gently to incorporate all the ingredients evenly.

      Season the tuna salad with salt and pepper to taste. Adjust the seasoning as needed based on your preference.

        To assemble the wraps, lay 2 lettuce leaves on a clean surface. Spoon a generous amount of the avocado tuna salad onto the center of each leaf.

          If desired, add your favorite toppings such as sliced tomatoes, sprouts, or pickles on top of the tuna salad.

            Carefully fold the sides of the lettuce leaves over the filling and then roll up from the bottom to create a wrap. Secure with a toothpick if needed.

              Repeat with the remaining lettuce leaves and tuna salad mixture until all wraps are assembled.

                Serve immediately, or refrigerate and enjoy as a refreshing meal prep option throughout the week!
