8 oz (about 2 cups) of rotini or bowtie pasta

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped (optional)

1/2 cup Greek yogurt

1/4 cup mayonnaise

1 packet ranch seasoning mix (about 1 oz)

2 tbsp fresh lime juice

Salt and pepper to taste

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the rotini or bowtie pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool it down; set aside.

    Prepare the Dressing: In a medium bowl, whisk together the Greek yogurt, mayonnaise, ranch seasoning mix, and fresh lime juice until smooth. Adjust with salt and pepper to taste.

      Combine the Ingredients: In a large mixing bowl, combine the cooked and cooled pasta, diced avocado, cherry tomatoes, corn, black beans, red bell pepper, red onion, and cilantro.

        Add the Dressing: Pour the creamy ranch dressing over the pasta salad mixture. Gently toss until all the ingredients are coated evenly with the dressing.
