Avocado Ranch Chicken Wraps

2 large tortillas (whole wheat or flour)

1 cup cooked chicken, shredded (grilled or rotisserie)

1 ripe avocado, mashed

1/2 cup ranch dressing

1 cup romaine lettuce, chopped

1 medium tomato, diced

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup red onion, thinly sliced

Salt and pepper, to taste

Fresh cilantro (optional, for garnish)

Instructions
 

Prepare the Avocado Dressing: In a small bowl, mix the mashed avocado with ranch dressing. Stir until the mixture is smooth and creamy. Season with salt and pepper to taste. Set aside.

    Assemble the Wraps: Lay the tortillas flat on a clean surface. Spread an even layer of the avocado ranch mixture over each tortilla, leaving about an inch around the edges.

      Add the Filling: Divide the shredded chicken evenly between the two tortillas, placing it on the lower half of each. Top the chicken with chopped romaine lettuce, diced tomato, shredded cheese, and red onion.

        Roll it Up: Starting from the bottom, carefully roll the tortilla over the filling, tucking it in as you go. Make sure to keep it tight to prevent the filling from spilling out. Once you’ve reached the top, use a little extra avocado ranch to seal the edge.
