Ingredients

For the Salmon:

4 salmon fillets (6 oz each)

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons sesame oil

1 tablespoon rice vinegar

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon Sriracha (adjust to taste)

1 teaspoon cornstarch (for thickening)

For the Rice:

2 cups jasmine rice

4 cups water

A pinch of salt

For the Veggies:

1 cup broccoli florets

1 cup snap peas

1 red bell pepper, thinly sliced

1 carrot, julienned

1 tablespoon olive oil

Salt and pepper to taste

For Garnish:

1/4 cup sliced green onions

1 tablespoon sesame seeds

Fresh cilantro leaves (optional)

Instructions

Prepare the Marinade: In a medium bowl, whisk together soy sauce, honey, sesame oil, rice vinegar, minced garlic, grated ginger, and Sriracha. Set aside a couple of tablespoons for glazing later.

Marinate the Salmon: In a large shallow dish, place the salmon fillets skin-side down. Pour the marinade over the salmon, ensuring each piece is well-coated. Marinate for at least 30 minutes in the refrigerator.

Cook the Rice: Rinse jasmine rice under cold water until the water runs clear. In a saucepan, bring 4 cups of water and a pinch of salt to a boil. Add the rice, reduce to a simmer, cover, and cook for 15 minutes or until water is absorbed. Turn off the heat and let sit for an additional 10 minutes. Fluff with a fork.

Prepare the Vegetables: While the rice is cooking, heat olive oil in a large skillet over medium-high heat. Add broccoli, snap peas, bell pepper, and carrot. Sauté for about 5-7 minutes until vegetables are tender-crisp. Season with salt and pepper, then remove from heat.

Cook the Salmon: Preheat a non-stick skillet or grill pan over medium-high heat. Remove salmon from marinade, letting excess drip off. Cook the salmon fillets for about 4-5 minutes per side, basting with reserved marinade during the last minute. If using cornstarch, add it to the remaining marinade in a saucepan, whisking continuously until it thickens. Pour this glaze over the salmon right before serving.

Assemble the Bowls: Start with a base of jasmine rice in each bowl. Top with a salmon fillet, sautéed vegetables, and drizzle with the thickened glaze.

Garnish: Sprinkle with sliced green onions, sesame seeds, and fresh cilantro, if desired.

Serve and Enjoy: Enjoy your Sweet & Spicy Asian Glazed Salmon Bowls warm, ideally with chopsticks!
