2 packs of instant ramen noodles (discard seasoning packets)

1 lb boneless, skinless chicken thighs

4 cups chicken broth

1 cup water

1 cup bok choy, chopped

1 cup shiitake mushrooms, sliced

2 green onions, chopped

2 cloves garlic, minced

1-inch piece ginger, grated

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon rice vinegar

1 teaspoon sriracha (optional, for heat)

2 soft-boiled eggs (optional)

Sesame seeds, for garnish

Fresh cilantro, for garnish

Instructions
 

Prepare the Chicken: In a large skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add the chicken thighs and sear them for about 5-7 minutes on each side until they are cooked through and golden brown. Remove from pan and let it rest before slicing.

    Make the Broth: In the same skillet, add garlic and ginger, sautéing for about 1 minute until fragrant. Add the chicken broth, water, soy sauce, rice vinegar, and sriracha. Bring this mixture to a boil, then reduce the heat to simmer for about 10 minutes.

      Noodle Time: While the broth is simmering, cook the ramen noodles according to package instructions. Drain and set aside.

        Add Veggies: In the last 5 minutes of simmering your broth, add the bok choy and shiitake mushrooms. Allow them to cook until the bok choy is tender and the mushrooms are soft.

          Assemble the Bowl: Divide the cooked ramen noodles among serving bowls. Pour a generous amount of broth with vegetables over the noodles. Top with sliced chicken thighs, soft-boiled eggs, chopped green onions, and garnish with sesame seeds and fresh cilantro.
