Ingredients

4 Chicken thighs (bone-in, skin-on for optimal flavor)

1/2 cup dried apricots, finely chopped

1/4 cup apricot preserves

2 tablespoons soy sauce

2 tablespoons Dijon mustard

2 tablespoons olive oil

1 tablespoon apple cider vinegar

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Marinade: In a mixing bowl, combine the chopped dried apricots, apricot preserves, soy sauce, Dijon mustard, olive oil, apple cider vinegar, minced garlic, grated ginger, and dried thyme. Stir until well combined.

Season the Chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.

Marinate the Chicken: In a large resealable plastic bag or a shallow dish, place the chicken thighs and pour the apricot mixture over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).

Prepare for Baking: Once marinated, remove the chicken from the refrigerator and let it sit at room temperature for about 10 minutes.

Bake the Chicken: Place the chicken thighs in a baking dish, skin side up, and pour the remaining apricot glaze over the top. Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown and crispy.

Broil for Extra Crispiness: For an additional crispy skin, switch on the broiler and broil the chicken for 2-3 minutes at the end of the baking time, keeping a close eye to prevent burning.

Garnish and Serve: Once cooked, remove the chicken from the oven and let it rest for 5 minutes. Garnish with freshly chopped parsley if desired, then serve hot with your choice of sides (like roasted vegetables or rice) and drizzle any leftover glaze from the pan over the chicken.
