Ingredients

2 cups rolled oats

1 cup all-purpose flour (or whole wheat flour for a healthier option)

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup unsweetened applesauce

1 teaspoon vanilla extract

2 cups peeled and diced apples (about 2 medium-sized apples, preferably Granny Smith or Honeycrisp)

1 tablespoon lemon juice

1/4 teaspoon ground nutmeg (optional)

1/4 cup chopped pecans or walnuts (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, allowing some overhang on the sides for easy removal later.

Prepare the Apples: In a medium bowl, toss the diced apples with lemon juice, cinnamon, and nutmeg (if using). Set aside to let the flavors meld while you prepare the crust.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, flour, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, and salt. Mix well to ensure the dry ingredients are evenly distributed.

Add Wet Ingredients: Pour in the melted butter, applesauce, and vanilla extract. Stir with a spatula or wooden spoon until all the ingredients are well combined and a sticky dough forms.

Assemble the Base Layer: Reserve about 1 cup of the mixture for the topping, and press the remaining mixture evenly into the bottom of the prepared baking dish. Use your fingers or the back of a measuring cup to pack it firmly.

Add the Apples: Evenly spread the apple mixture over the oat base, ensuring the apples are distributed throughout.

Create the Topping: Crumble the reserved oat mixture over the apples, spreading it as evenly as possible. If desired, sprinkle the chopped nuts over the top for added crunch.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the apples are bubbly. You can check for doneness by inserting a toothpick; it should come out clean.

Cool and Slice: Allow the bars to cool in the pan for at least 10 minutes before using the parchment overhang to lift them out. Let them cool completely on a wire rack before slicing into squares.

Serve: Enjoy warm or at room temperature! These bars are perfect for breakfast, as a snack, or even dessert. Pair with a drizzle of caramel sauce or a scoop of vanilla ice cream for an indulgent treat.
