Ingredients

For the Muffins:

1 cup rolled oats

1 cup buttermilk (or non-dairy milk)

1/2 cup unsweetened applesauce

1/4 cup vegetable oil (or melted coconut oil)

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 cup all-purpose flour (or whole wheat flour)

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1 1/2 cups diced apples (about 2 medium apples)

For the Crunchy Topping:

1/2 cup rolled oats

1/4 cup almond flour (or any nut flour)

2 tablespoons brown sugar

1/2 teaspoon ground cinnamon

3 tablespoons melted butter (or coconut oil)

1/4 cup chopped nuts (optional, such as walnuts or pecans)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.

Prepare Oat Mixture: In a mixing bowl, combine the rolled oats and buttermilk. Let this mixture sit for about 5-10 minutes to soften the oats.

Mix Wet Ingredients: Add the applesauce, vegetable oil, brown sugar, egg, and vanilla extract to the oat mixture. Whisk until everything is well blended.

Prepare Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix. Gently fold in the diced apples.

Make Crunchy Topping: In a separate small bowl, mix the oats, almond flour, brown sugar, cinnamon, melted butter, and chopped nuts together until crumbly.

Fill Muffin Cups: Divide the muffin batter evenly among the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the crunchy topping generously over each muffin.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy your delicious Apple Oat Muffins with Crunchy Topping warm or at room temperature!
