Apple Cinnamon Roll Cupcakes

For the Cupcakes:

1 cup all-purpose flour

1 cup sugar

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

1/2 cup buttermilk

1 cup diced apples (about 2 small apples, peeled and cored)

For the Cinnamon Swirl Filling:

1/4 cup brown sugar

1 tablespoon ground cinnamon

2 tablespoons unsalted butter, softened

For the Cream Cheese Frosting:

4 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 1/2 cups powdered sugar

1 teaspoon vanilla extract

Pinch of salt

For Garnish:

Extra diced apples

Whipped cream (optional)

Cinnamon sprinkle

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

    Make the Cinnamon Swirl Filling: In a small bowl, combine the brown sugar, ground cinnamon, and softened butter. Mix to a paste and set aside.

      Prepare the Cupcake Batter:

        - In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, salt, and ground cinnamon until well combined.

          - In another bowl, whisk the melted butter, egg, vanilla extract, and buttermilk until fully incorporated.

            - Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to over-mix. Fold in the diced apples gently.

              Fill the Cupcake Liners: Fill each cupcake liner about 1/2 full with batter. Add a teaspoon of the cinnamon swirl filling on top, and then cover it with a little more batter until the cups are about 3/4 full.
