Apple Cinnamon Oatmeal Breakfast Cups

2 cups rolled oats

1 1/2 cups unsweetened almond milk (or any milk of choice)

2 medium apples, peeled, cored, and diced

1/4 cup maple syrup or honey

1/4 cup brown sugar (light or dark)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup raisins or dried cranberries (optional)

1/2 cup chopped walnuts or pecans (optional)

Cooking spray or muffin liners for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line it with muffin liners to prevent sticking.

    Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, cinnamon, nutmeg, and salt. Stir well to evenly distribute the spices.

      Prepare the Wet Ingredients: In a separate bowl, whisk together the almond milk, maple syrup (or honey), and vanilla extract until well combined.

        Combine Ingredients: Pour the wet mixture into the bowl with the dry ingredient mixture. Stir until the oats are fully coated. Add in the diced apples, raisins (if using), and nuts (if using).

          Fill Muffin Tin: Spoon the oatmeal mixture evenly into the prepared muffin tin, filling each cup almost to the top (they will rise slightly as they bake).

            Bake: Place the muffin tin in the preheated oven and bake for approximately 25-30 minutes, or until the edges are golden and the tops appear set.

              Cool and Serve: Remove the breakfast cups from the oven and let them cool in the muffin tin for about 5-10 minutes. Carefully transfer them to a cooling rack. Serve warm or at room temperature. These can also be stored in an airtight container in the fridge for up to a week.
