Ingredients

2 cups rolled oats

2 cups milk (or non-dairy alternative)

2 ripe apples, peeled, cored, and diced

1/2 cup brown sugar or coconut sugar

1/4 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

Fresh apple slices and extra cinnamon for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish with a little butter or cooking spray.

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, brown sugar, cinnamon, nutmeg, baking powder, and salt. Mix well until evenly distributed.

Mix Wet Ingredients: In another bowl, whisk together the milk, maple syrup, and vanilla extract until well blended.

Combine Mixtures: Pour the wet mixture into the dry ingredients, stirring gently to combine. Fold in the diced apples, walnuts (if using), and raisins or cranberries (if using) until evenly mixed.

Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly. If desired, top with fresh apple slices and a sprinkle of extra cinnamon.

Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the oatmeal is set.

Cool and Serve: Allow the oatmeal bake to cool for about 5-10 minutes before slicing into squares. Serve warm, drizzled with additional maple syrup or a dollop of yogurt if desired.
