2 cups rolled oats

1 teaspoon baking powder

1 teaspoon cinnamon

½ teaspoon salt

2 cups milk (dairy or non-dairy)

2 large eggs

¼ cup maple syrup (or honey)

2 teaspoons vanilla extract

2 large apples, peeled, cored, and diced (about 2 cups)

½ cup walnuts or pecans, chopped (optional)

1 tablespoon butter or coconut oil, for greasing the baking dish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease an 8x8 inch baking dish with butter or coconut oil.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir well to ensure the dry ingredients are evenly mixed.

      Prepare Wet Ingredients: In another bowl, whisk together the milk, eggs, maple syrup, and vanilla extract until well combined.

        Combine Ingredients: Add the wet mixture to the dry ingredients, stirring until everything is evenly coated. Stir in the diced apples and nuts (if using).

          Pour into Baking Dish: Pour the oatmeal mixture into the greased baking dish, spreading it out evenly.
