Ingredients
  

4 boneless, skinless chicken breasts

1 cup sliced mushrooms

4 strips of crispy cooked bacon, crumbled

1 cup shredded Monterey Jack cheese

½ cup honey mustard dressing

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a small bowl, mix the honey mustard dressing, garlic powder, onion powder, smoked paprika, salt, and pepper. Place the chicken breasts in a resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour (or overnight for better flavor).

    Prepare the Grill/Skillet: Heat olive oil in a grill pan or skillet over medium-high heat. If using a grill, preheat it to medium-high.

      Cook the Chicken: Remove the chicken from the marinade (discard the marinade) and cook the chicken breasts for about 6-7 minutes on each side or until fully cooked through and internal temperature reaches 165°F (75°C).

        Add Mushrooms and Bacon: In the last few minutes of cooking, sprinkle the sliced mushrooms on top of the chicken. Once the mushrooms start to soften, top each breast with crumbled bacon and a generous handful of Monterey Jack cheese.

          Melt the Cheese: Close the lid of the grill or cover the skillet with a lid to help the cheese melt. Cook for an additional 2-3 minutes until the cheese is bubbling and golden.

            Serve: Remove the chicken from the heat and let it rest for 5 minutes. Garnish with chopped fresh parsley before slicing and serving.
