2 medium zucchinis, sliced into 1/4-inch thick rounds

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon Italian seasoning

1/4 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

Cooking spray or olive oil for spraying

Preheat the Air Fryer: Start by preheating your air fryer to 400°F (200°C) for about 5 minutes.

    Prepare the Breading: In a shallow dish, mix the Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper until thoroughly combined.

      Prepare the Zucchini: In another shallow bowl, beat the eggs. Dip each zucchini coin in the beaten egg, allowing any excess to drip off, and then coat it with the Parmesan-breadcrumb mixture. Press gently to ensure it adheres well. Place the coated zucchini on a plate and repeat until all coins are breaded.
