1 block (14 oz) firm tofu, pressed and drained

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon cornstarch

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

4 large tortillas (whole wheat or flour)

1 cup shredded lettuce

1 cup diced bell peppers (mixed colors)

1 avocado, sliced

1/2 cup diced cucumber

1/4 cup chopped fresh cilantro

1/4 cup hummus or your favorite spread

Prepare the Tofu: Start by pressing the tofu for at least 30 minutes to remove excess moisture. Once pressed, cut the tofu into bite-sized cubes.

    Marinate the Tofu: In a bowl, combine soy sauce, sesame oil, garlic powder, smoked paprika, and black pepper. Add the cubed tofu and gently toss to coat. Let marinate for at least 15 minutes to allow the flavors to absorb.

      Coat the Tofu: After marinating, sprinkle cornstarch evenly over the tofu cubes and toss until they are well coated. This will give the tofu a crispy texture when cooked.

        Air Fry the Tofu: Preheat your air fryer to 375°F (190°C). Arrange the tofu cubes in a single layer in the air fryer basket. Cook for 15 minutes, shaking the basket halfway through to ensure even cooking, until the tofu is golden brown and crispy.

          Assemble the Wraps: Lay out the tortillas on a clean surface. Spread a layer of hummus across each tortilla, leaving a small margin around the edges. Next, add a generous handful of shredded lettuce, followed by the air-fried tofu, diced bell peppers, cucumber, and avocado slices. Sprinkle with cilantro for an added burst of flavor.

            Wrap It Up: Fold in the edges of the tortilla and then roll it tightly from the bottom up to create your wraps. You can secure them with toothpicks if desired.
