2 large sweet onions (Vidalia or Walla Walla)

1 cup buttermilk

1 teaspoon hot sauce (adjust to taste)

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (or more for extra heat)

½ teaspoon salt

¼ teaspoon black pepper

Cooking spray or olive oil spray

Instructions
 

Prepare the Onions: Peel the onions and cut them into ½-inch thick rings. Separate the rings and set them aside.

    Make the Buttermilk Mixture: In a medium bowl, combine the buttermilk and hot sauce. Mix well, then add the onion rings to the mixture. Make sure each ring is submerged. Cover and refrigerate for at least 30 minutes to marinate.

      Prepare the Breading Station: In a separate bowl, combine the flour with smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. In another bowl, place the panko breadcrumbs.

        Bread the Onion Rings: Remove the onion rings from the buttermilk mixture, allowing the excess liquid to drip off. Dip each ring into the seasoned flour, ensuring they are fully coated, then shake off any excess. Next, dip the floured rings back into the buttermilk mixture, and finally, coat them with the panko breadcrumbs, pressing gently to adhere. Repeat with all onion rings.

          Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

            Air Fry the Onion Rings: Lightly spray the air fryer basket with cooking spray. Arrange the breaded onion rings in a single layer in the basket, ensuring they do not overlap (you may need to do this in batches). Lightly spray the tops of the onion rings with cooking spray for extra crispiness.

              Cook the Onion Rings: Air fry them for 10-12 minutes, flipping halfway through, until they are golden brown and crispy. Depending on your air fryer, you may need to adjust the cooking time slightly.

                Serve: Once cooked, remove the onion rings from the air fryer and let them cool for a minute. Serve them hot with your favorite dipping sauce, such as spicy ranch or chipotle mayo.
