1 pound fresh green beans, trimmed

1 cup white vinegar

1 cup water

3 tablespoons granulated sugar

1 tablespoon sea salt

2 garlic cloves, smashed

1 teaspoon dried dill weed (or 2 sprigs fresh dill)

1 teaspoon mustard seeds

1/2 teaspoon red pepper flakes (optional, for a kick)

1 jar (16 oz) with a lid

Instructions
 

Blanch the Green Beans:

    Fill a large pot with water and bring to a boil. Add the trimmed green beans and cook for 2-3 minutes until they are bright green and slightly tender. Drain and immediately plunge them into a bowl of ice water to stop the cooking process. Once cooled, drain again and set aside.

      Prepare the Brine:

        In a small saucepan over medium heat, combine the white vinegar, water, granulated sugar, sea salt, smashed garlic, dill weed, mustard seeds, and red pepper flakes. Stir until the sugar and salt are dissolved. Bring the mixture to a gentle simmer, then remove from heat.

          Pack the Jars:

            Pack the blanched green beans into the jar vertically, ensuring they fit snugly. You can add a few pieces of garlic and dill sprigs between the green beans for added flavor.

              Pour the Brine:

                Carefully pour the hot brine over the packed green beans, ensuring they are fully submerged. Leave a little space at the top of the jar to allow for expansion as they cool.
