1 pound fresh jalapeño peppers (about 10-12 medium-sized)

1 cup granulated sugar

1 cup distilled white vinegar

1 teaspoon salt

1 teaspoon black peppercorns

2 cloves garlic, peeled and crushed

1 tablespoon olive oil (optional for sautéing)

1 jar (16 oz) for storage

Instructions
 

Prepare the Jalapeños:

    - Wash the jalapeño peppers thoroughly. Slice them into rings or halves, depending on your preference. For less heat, remove the seeds.

      Make the Pickling Brine:

        - In a medium saucepan, combine the sugar, white vinegar, salt, black peppercorns, and crushed garlic.

          - Heat the mixture over medium heat, stirring constantly until the sugar dissolves completely.

            Pack the Jalapeños:

              - If desired, gently sauté the jalapeño slices in olive oil for 2-3 minutes to enhance their flavor (optional).

                - Carefully pack the sliced jalapeños into the clean jar.

                  Pour the Brine:

                    - Once the brine is ready, pour it over the jalapeños in the jar, making sure they are fully submerged. If you have leftover brine, you can store it in the fridge for another use.

                      Seal and Cool:

                        - Seal the jar tightly with a lid. Allow the jalapeños to cool completely at room temperature before transferring them to the refrigerator.

                          Marinate:

                            - Let the jalapeños sit for at least 24 hours in the refrigerator before enjoying them. They will develop a wonderful sweet and spicy flavor!
