Ingredients

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (adjust for spice level)

Salt and pepper, to taste

8 small corn tortillas

1 cup red cabbage, thinly sliced

1/2 cup carrots, grated

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice (about 1 lime)

1 avocado, sliced

1/4 cup sour cream or Greek yogurt (optional)

Lime wedges, for serving

Instructions

Prepare the Shrimp: In a medium bowl, combine the shrimp, olive oil, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Mix well until the shrimp are evenly coated. Set aside to marinate for about 10 minutes.

Make the Slaw: In a separate bowl, mix the sliced red cabbage, grated carrots, red onion, cilantro, and lime juice. Toss until well combined, and season with salt and pepper to taste. Set aside.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp to the skillet in a single layer. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat.

Warm the Tortillas: In a separate, dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, until pliable.

Assemble the Tacos: On each tortilla, place a generous amount of the slaw. Top with a few shrimp, a slice of avocado, and drizzle with sour cream or Greek yogurt if desired.

Serve: Serve the tacos warm with lime wedges on the side for an extra squeeze of freshness.
