12 oz (340g) spaghetti or your favorite pasta

1 lb (450g) Italian sausage (mild or spicy, casing removed)

2 tablespoons olive oil

1 medium onion, thinly sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon dried red pepper flakes (adjust to taste)

1 can (14.5 oz) diced tomatoes (with juices)

1/4 cup fresh basil leaves, chopped (plus more for garnish)

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta cooking water, then drain the pasta and set aside.

    Brown the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the sausage and break it apart with a wooden spoon. Cook until browned and cooked through (about 5-7 minutes). Remove the sausage from the skillet and set aside, leaving the drippings in the pan.

      Sauté the Vegetables: In the same skillet, add the sliced onion and bell peppers. Sauté for about 5 minutes until softened. Add the minced garlic, oregano, and red pepper flakes. Cook for an additional minute until fragrant.

        Add Tomatoes and Sausage: Pour in the diced tomatoes with their juices, and bring to a simmer. Stir in the cooked sausage and let the mixture simmer for about 5 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing everything together. If the sauce seems too thick, add a bit of the reserved pasta water until desired consistency is reached.
